I have been gluten free for a year, at first it was a bit scary and very difficult. I always had to ask questions instead of just assuming that gluten was in certain foods. I had to become a label reader, a researcher. I had to be dedicated. It seems like a part time job when you first get started but it does get easier. This post is to help people who also either have an allergy or intolerance for gluten.
The good thing is, gluten free is becoming a “trend” now. Stores are better about labeling their gluten free products (Target, Kroger, Publix), more and more items are becoming available. It’s getting easier! For most of us, it isn’t a “trend”, it’s a lifestyle, it’s how we stay healthy.
When cooking gluten free there is a lot of trial and error, and the recipes do not always taste good the first time you make them, but do not get discouraged. It is a learning process. I am still learning!
My tip of the week is to look on Amazon for coconut flour wraps. They taste very good and are
great for light meals instead of a heavy breaded sandwich.
